- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter cubed
- 2/3 cup whole milk or buttermilk
- 1 teaspoon vanilla extract optional
- 2 cups fresh strawberries sliced (or seasonal fruit)
- 1/4 cup granulated sugar for fruit
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract for whipped cream
In a bowl, macerate the sliced fruit with 1/4 cup sugar; set aside.
In a large bowl, combine flour, sugar, baking powder, and salt. Cut in cold butter until crumbly.
Stir in milk and vanilla until just combined. Do not overmix.
Turn dough onto floured surface, knead lightly, and pat into 1-inch thick circle. Cut biscuits.
Bake biscuits at 425°F (220°C) for 12-15 minutes until golden.
Whip cream with powdered sugar and vanilla until soft peaks form.
