- Mix Dry Ingredients:

- Knead the Dough:
- Transfer the dough onto a floured surface and knead it for 5-7 minutes until it’s smooth and elastic.
- Let the Dough Rest:
- Cover the dough with a clean towel and let it rest for about 10 minutes.
- Shape the Dough:
- Divide the dough into 6-8 equal portions and roll each into a ball. Flatten them with your hands or a rolling pin to form ½-inch thick discs.
- Heat Oil:
- Heat enough vegetable oil in a frying pan over medium heat to cover the bottom of the pan.
- Fry the Johnny Cakes:
- Fry each dough disc for about 3-4 minutes on each side or until golden brown and crispy.
- Drain the Oil:
- Remove the cakes from the oil and place them on paper towels to drain excess oil.
- Serve:
- Serve hot with your favorite sides, such as beans, eggs, or stewed chicken.

Storage: Johnny cakes are best eaten fresh, but you can store leftovers in an airtight container for 1-2 days at room temperature. Reheat in a toaster or skillet to crisp them up again.
