- 1 can 15 oz whole kernel corn, drained
- 1 cup creamed corn
- 1 cup all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 egg
- ½ cup milk
- 1 tbsp melted butter optional
- Oil for frying
- Optional add-ins:
- ¼ cup shredded cheddar cheese
- 1 –2 chopped jalapeños
- A pinch of paprika or garlic powder
Prepare the corn mixture: Mix whole corn and creamed corn in a bowl.
Freeze: Drop spoonfuls of the mixture onto a parchment-lined tray and freeze for 1 hour until firm.
Make the batter: In another bowl, whisk together flour, baking powder, salt, pepper, egg, milk, and melted butter (if using) until smooth.
Heat oil: Heat oil in a deep frying pan to 350°F (175°C).
Coat the nuggets: Dip frozen corn portions into the batter, coating completely.
Fry: Fry in small batches until golden brown, about 3–4 minutes per side. Drain on paper towels.
Serve: Enjoy warm with your favorite dipping sauce.
Optional healthy method: Bake or air fry at 375°F (190°C) for 10–12 minutes for a lighter version.
