- Pepper to taste
- 1 tbsp olive oil
- 1/2 cup unsalted butter softened
- 2 cloves garlic minced
- 1 tbsp fresh parsley chopped
- 1 tbsp fresh chives chopped
- 1 tsp smoked paprika
- 1/2 tsp red pepper flakes optional
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
Prep the steak: Season the steak cubes with salt and pepper. Let them sit at room temperature for 10 minutes.
Make cowboy butter: Mix softened butter with garlic, parsley, chives, smoked paprika, red pepper flakes, Dijon mustard, lemon juice, salt, and pepper in a bowl.
Cook the steak bites: Heat olive oil in a skillet over medium-high heat. Add the steak in a single layer, cook for 2-3 minutes per side, until browned and seared.
Add cowboy butter: Remove steak from the skillet. Lower heat, add the cowboy butter, and stir until melted and bubbly.
Toss steak bites in butter: Return steak bites to the skillet and toss to coat in the buttery sauce for 1-2 minutes.
Serve: Transfer steak bites to a plate, garnish with extra herbs, and serve immediately.
Steak Cuts: Ribeye, sirloin, or filet mignon are ideal cuts for this recipe.
Doneness: Adjust cooking time based on how you like your steak. Medium-rare takes 2-3 minutes per side.
Leftovers: Store leftovers in the fridge for up to 3 days. Reheat with a little butter in a skillet.
