- 400 g crayfish tails
- 3 tbsp butter
- 3 tbsp flour
- 2 cups milk
- 1 cup grated cheese Gruyère or Cheddar
- 1 tsp mustard
- 1 tsp lemon juice
- Salt & pepper
- Optional: garlic paprika, white wine, breadcrumbs
Melt butter, add flour to make roux.
Gradually whisk in milk, cook until thick.
Add cheese, mustard, lemon juice, salt, and pepper.
Cook crayfish lightly and fold into sauce.
Pour into baking dish, sprinkle breadcrumbs, bake 15–20 min at 180°C.
- Use fresh or thawed crayfish.
- Don’t overheat cheese.
- Serve with rice, bread, or salad.
