Ingredients
  

  • 400 g crayfish tails
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups milk
  • 1 cup grated cheese Gruyère or Cheddar
  • 1 tsp mustard
  • 1 tsp lemon juice
  • Salt & pepper
  • Optional: garlic paprika, white wine, breadcrumbs

Instructions
 

  • Melt butter, add flour to make roux.

  • Gradually whisk in milk, cook until thick.

  • Add cheese, mustard, lemon juice, salt, and pepper.

  • Cook crayfish lightly and fold into sauce.
  • Pour into baking dish, sprinkle breadcrumbs, bake 15–20 min at 180°C.

Notes

  • Use fresh or thawed crayfish.
  • Don’t overheat cheese.
  • Serve with rice, bread, or salad.
