  • Cream Butter and Sugars: In a large bowl, beat together the butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  • Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and espresso.
  • Mix Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Add Chocolate: Stir in the chocolate chips and chopped dark chocolate (if using).
  • Scoop Dough: Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets, spacing the cookies about 2 inches apart.
