Instructions
 

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

  • In a medium bowl, whisk together the flour, baking soda, salt, and espresso powder.
  • In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs one at a time, then stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
  • Fold in the chocolate chips until evenly distributed.
  • Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden and the centers are soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  • For a healthier option, you can use coconut sugar instead of regular granulated sugar, or substitute almond flour for a gluten-free version.
  • Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
  • For a richer flavor, consider using dark chocolate chips or adding a dash of cinnamon to the dough.
