- 200 g 7 oz cherry or grape tomatoes
- 100 g 3.5 oz soft goat cheese (chèvre)
- 1 –2 tbsp olive oil
- 1 garlic clove minced
- 1 tsp honey optional
- 1 tbsp fresh basil or thyme chopped
- Salt and black pepper to taste
- Toasted baguette slices or crusty bread for serving
Prepare the tomatoes: In a baking dish, mix tomatoes with olive oil, garlic, salt, and pepper.
Roast for 10–15 minutes, until tomatoes soften and blister.
Add goat cheese: Remove from oven, crumble or spoon goat cheese over the tomatoes.
Drizzle honey and sprinkle herbs on top.
Bake again for 5–7 minutes, until cheese is soft and slightly golden.
Serve warm with toasted bread and a drizzle of olive oil.
Add a splash of balsamic glaze for extra flavor.
For a heartier dish, mix in roasted peppers or olives.
You can also serve it cold as a salad by skipping the baking step and using fresh tomatoes.
