Ingredients
  

  • 200 g 7 oz cherry or grape tomatoes
  • 100 g 3.5 oz soft goat cheese (chèvre)
  • 1 –2 tbsp olive oil
  • 1 garlic clove minced
  • 1 tsp honey optional
  • 1 tbsp fresh basil or thyme chopped
  • Salt and black pepper to taste
  • Toasted baguette slices or crusty bread for serving

Instructions
 

  • Prepare the tomatoes: In a baking dish, mix tomatoes with olive oil, garlic, salt, and pepper.

  • Roast for 10–15 minutes, until tomatoes soften and blister.
  • Add goat cheese: Remove from oven, crumble or spoon goat cheese over the tomatoes.
  • Drizzle honey and sprinkle herbs on top.
  • Bake again for 5–7 minutes, until cheese is soft and slightly golden.
  • Serve warm with toasted bread and a drizzle of olive oil.

Notes

Add a splash of balsamic glaze for extra flavor.
For a heartier dish, mix in roasted peppers or olives.
You can also serve it cold as a salad by skipping the baking step and using fresh tomatoes.
