- 1 ½ cups chocolate cookie crumbs for crust
- 6 tbsp unsalted butter melted
- 3 packages 8 oz each cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs room temperature
- 1 cup sour cream
- 1 tsp vanilla extract
- 8 oz Godiva dark chocolate melted
- 1 cup heavy cream for mousse
- 2 tbsp powdered sugar
- 8 oz Godiva chocolate for ganache
- ½ cup heavy cream for ganache
Preheat oven to 325°F (163°C). Grease and line the bottom of a springform pan with parchment.
Mix cookie crumbs with melted butter. Press firmly into the pan to form the crust. Bake for 10 minutes, then cool.
Beat cream cheese and sugar until smooth. Add eggs one at a time, followed by sour cream, vanilla, and melted Godiva chocolate.
Pour batter over the crust. Bake in a water bath for 55–65 minutes, until edges are set and center is slightly jiggly.
Cool completely, then refrigerate for at least 4 hours or overnight.
Whip heavy cream with powdered sugar to form mousse. Spread evenly over chilled cheesecake.
