Ingredients
  

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon butter
  • Fresh parsley or basil for garnish
  • Optional: red pepper flakes for heat

Instructions
 

  • Season the salmon with salt and black pepper on both sides.
  • Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets and sear for 3–4 minutes per side until golden brown. Remove and set aside.
  • In the same skillet, add butter, minced garlic, and sun-dried tomatoes. Sauté for 1 minute until fragrant.
  • Pour in the heavy cream and stir in Parmesan cheese and Italian seasoning. Let the sauce simmer for 2–3 minutes until slightly thickened.
  • Return the salmon to the skillet and spoon the sauce over the top. Simmer for another 4–5 minutes until the salmon is fully cooked and flaky.
  • Garnish with fresh parsley or basil and serve warm.

  • Do not overcook the salmon; it should remain moist and flaky.
  • Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
  • Serve with pasta, mashed potatoes, or steamed vegetables.
  • For extra flavor, add a splash of white wine to the sauce before the cream.
