Ingredients
  

  • 1 lb ground beef
  • 1 package 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 packet ranch dressing mix
  • 1 can 10 oz diced tomatoes with green chilies (like Rotel)
  • 1 can 4 oz diced green chilies (optional for extra spice)
  • 1 cup shredded cheddar cheese or a mix of cheddar and pepper jack
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped jalapeños optional for spice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions
 

  • Cook the Ground Beef: Brown the ground beef in a skillet over medium heat. Drain excess grease.
  • Mix the Base: In a large bowl, combine the softened cream cheese, sour cream, ranch dressing mix, garlic powder, onion powder, salt, and pepper. Stir until smooth.
  • Combine the Ingredients: Add the cooked ground beef, diced tomatoes with green chilies, green chilies (optional), jalapeños, and shredded cheddar cheese. Stir to combine.
  • Bake: Transfer the mixture to a 9x13-inch baking dish. Sprinkle mozzarella and the remaining cheddar cheese on top.
  • Bake It: Preheat the oven to 375°F (190°C) and bake for 20-25 minutes or until the cheese is melted and bubbly.
  • Serve: Allow it to cool slightly before serving. Enjoy with tortilla chips, crackers, or veggies.

Notes

Make Ahead: You can prepare the dip a day ahead, refrigerate it, and bake when ready to serve. Spiciness: Adjust the level of heat by adding more or fewer jalapeños, or using mild or hot Rotel. Storage: Leftovers can be stored in an airtight container in the fridge for up to 3-4 days. Reheat in the oven or microwave before serving.
