Ingredients
  

  • 3 eggs
  • ½ cup fresh or soaked dried morel mushrooms
  • 1 tbsp butter or oil
  • Salt and pepper
  • ¼ cup cheese optional
  • Fresh herbs optional

Instructions
 

  • Prepare the Mushrooms Clean and slice the morels.
  • Cook the Mushrooms Heat butter or oil in a pan. Add mushrooms and cook for 5–7 minutes. Remove from pan.
  • Make the Omelette Whisk eggs with salt and pepper. Pour into the pan. When almost set, add mushrooms, cheese, and herbs. Fold and cook for 30 more seconds. Serve hot.

Notes

Use fresh morels when in season. Dried morels work too — just soak them in warm water for 20–30 minutes.
