Ingredients
  

  • 4 large eggs
  • 2 medium-sized potatoes peeled and diced
  • 4 slices of bacon or vegetarian sausage
  • 1 cup of green chile sauce either homemade or store-bought
  • 4 large flour tortillas
  • 1/2 cup shredded cheddar cheese optional
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Instructions
 

  • Prepare the Potatoes: Heat a skillet over medium-high heat. Add diced potatoes and cook until crispy and golden, about 7-10 minutes. Season with salt and pepper to taste. Set aside.
  • Cook the Bacon: In the same skillet, cook the bacon until crispy. Remove from the pan, crumble, and set aside.
  • Scramble the Eggs: In a medium bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet and scramble until fully cooked. Remove from heat.
  • Assemble the Burritos: Warm the tortillas in a tortilla warmer or by placing them in a dry skillet for a few seconds on each side. Spread a spoonful of green chile sauce in the center of each tortilla.
  • Add the Fillings: Place some crispy potatoes, scrambled eggs, bacon (or sausage), and shredded cheese (if using) in the center of the tortilla. Roll up the tortilla, folding in the sides, to form a burrito.
  • Serve: Garnish with fresh cilantro and an extra drizzle of green chile sauce if desired. Serve warm and enjoy!

Notes

Vegetarian Option: Use vegetarian sausage or skip the meat entirely for a meatless version.
Green Chile Sauce: You can make your own green chile sauce using roasted green chilies, garlic, and onion, or purchase it pre-made from the store.
