Ingredients
  

  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup mascarpone cheese
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1 tsp vanilla extract
  • 1 package ladyfinger cookies or gingersnap cookies
  • 1/2 cup strong brewed coffee cooled

Instructions
 

  • Prepare the Pumpkin Cream: Mix pumpkin, mascarpone, sugar, spices, and vanilla until smooth.
  • Whip the Cream: Whip heavy cream until stiff peaks form and fold into pumpkin mixture.
  • Prepare the Cookies: Dip cookies briefly in coffee.
  • Assemble the Trifle: Layer soaked cookies and pumpkin cream in a trifle dish; repeat layers.
  • Chill: Refrigerate at least 4 hours or overnight.
  • Serve & Garnish: Sprinkle cinnamon, cookie crumbs, or nuts on top before serving.

Use chilled ingredients for easier layering.
