Shallow bowl (for dipping)
Plate (for coating the chicken)
Tongs or fork (for handling the chicken)
- 2 boneless skinless chicken breasts (or thighs)
- 1 cup Rice Krispies cereal crushed or whole
- 1/2 cup all-purpose flour
- 1 egg
- 1 tablespoon milk
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Cooking spray for the air fryer basket
Prepare the chicken: Pat the chicken dry with paper towels. If the breasts are too thick, slice them in half horizontally for even cooking.
Crush the Rice Krispies: In a shallow bowl, crush the Rice Krispies into small pieces (a rolling pin or your hands work well).
Prepare the coating: In a separate shallow bowl, mix the flour, salt, pepper, garlic powder, and paprika. In another bowl, beat the egg with the milk.
Coat the chicken: Dip each piece of chicken first into the flour mixture, then into the egg mixture, and finally into the crushed Rice Krispies. Press the Rice Krispies into the chicken to make sure they stick well.
Preheat the air fryer: Set the air fryer to 375°F (190°C) and preheat for about 3-5 minutes.
Air fry the chicken: Lightly spray the air fryer basket with cooking spray. Place the coated chicken pieces in the basket in a single layer. Air fry at 375°F (190°C) for 12-15 minutes, flipping halfway through, until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).
Serve: Once done, remove from the air fryer and let the chicken rest for a few minutes before serving.
Notes:
- For an extra crunch, you can mix in some breadcrumbs with the Rice Krispies.
- If you want a spicier kick, add some cayenne pepper or chili powder to the flour mixture.
- Ensure the chicken is evenly coated for the crispiest result.
- For a healthier version, try using whole wheat flour or adding some Parmesan to the Rice Krispies coating.
