Ingredients
  

  • 4 boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 2 medium tomatoes chopped
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro chopped (for garnish)
  • 1/2 cup chicken broth or water

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken thighs with salt and pepper. Brown them on both sides until golden, about 4 minutes per side. Remove and set aside.
  • In the same skillet, sauté onions and garlic until fragrant and translucent, about 3-4 minutes.
  • Add chopped tomatoes, chili powder, cumin, paprika, salt, and pepper. Cook until tomatoes soften and sauce thickens, about 5 minutes.
  • Return chicken to skillet, pour in chicken broth, reduce heat to low, cover, and simmer for 20 minutes or until chicken is cooked through.
  • Garnish with chopped cilantro and serve hot.

Notes

For a spicier version, add a pinch of cayenne pepper or fresh chopped chili.
Substitute chicken thighs with boneless skinless breasts, adjusting cooking time accordingly.
Serve with rice, roasted veggies, or warm tortillas for a complete meal.
Leftovers store well in the fridge for up to 4 days.
