- 4 boneless skinless chicken thighs
- 2 tbsp olive oil
- 1 medium onion finely chopped
- 3 cloves garlic minced
- 2 medium tomatoes chopped
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Fresh cilantro chopped (for garnish)
- 1/2 cup chicken broth or water
Heat olive oil in a large skillet over medium heat.
Season chicken thighs with salt and pepper. Brown them on both sides until golden, about 4 minutes per side. Remove and set aside.
In the same skillet, sauté onions and garlic until fragrant and translucent, about 3-4 minutes.
Add chopped tomatoes, chili powder, cumin, paprika, salt, and pepper. Cook until tomatoes soften and sauce thickens, about 5 minutes.
