- 1 kg fresh mussels cleaned and debearded
- 2 tablespoons olive oil
- 4-5 garlic cloves minced
- 1 small onion chopped
- 2-3 red chilies adjust to taste
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper optional for extra heat
- 1/2 teaspoon black pepper
- Salt to taste
- 1/4 cup white wine optional
- 1 cup fresh chopped tomatoes
- 2 tablespoons fresh coriander for garnish
Prep Mussels: Clean and debeard the mussels, discarding any open ones.
Sauté Aromatics: Heat olive oil in a pan, sauté onions and garlic until soft.
Add Spices: Stir in chilies, paprika, cayenne, black pepper, and salt. Cook for 2 minutes.
Cook Tomatoes and Wine: Add chopped tomatoes, cook for 3 minutes, then pour in wine and simmer for 2-3 minutes.
Cook Mussels: Add mussels, cover, and cook for 5-7 minutes until opened.
Garnish and Serve: Remove from heat, garnish with coriander, and serve with bread or rice.

- Discard any mussels that don’t open after cooking.
