Instructions
 

Cook the Chicken

  • If not using pre-cooked chicken, boil or poach boneless, skinless chicken breasts until cooked through (internal temp 165°F). Let cool, then finely chop or shred.

Prepare the Dressing

  • In a mixing bowl, combine the mayonnaise, sour cream (if using), sweet relish, onion powder, garlic powder, salt, and pepper. Mix until smooth.

Combine Ingredients

  • Add the chopped chicken and diced celery to the bowl. Mix gently until everything is evenly coated.

Chill the Salad

  • Cover and refrigerate for at least 1 hour to allow the flavors to meld.

Serve

  • Serve chilled on croissants, sandwich bread, crackers, or over a bed of lettuce. Garnish with fresh parsley if desired.

Notes

For a healthier version, use Greek yogurt in place of sour cream.
Adjust the amount of relish to control sweetness.
Add halved red grapes or toasted almonds for a creative twist (though not in the original Straub’s).
Tastes best after chilling overnight.
