Ingredients
  

  • 1 ½ cups all-purpose flour
  • 3 ½ tsp baking powder
  • 1 tbsp granulated sugar
  • ¼ tsp salt
  • 1 ¼ cups milk
  • 1 large egg
  • 3 tbsp unsalted butter melted
  • 1 tsp vanilla extract

Instructions
 

  • Prepare Dry Ingredients:
  • In a large bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.
  • Mix Wet Ingredients:
  • In a separate bowl, beat the egg, then add the milk, melted butter, and vanilla extract. Whisk until smooth.
  • Combine Wet and Dry Ingredients:
  • Pour the wet ingredients into the dry ingredients and stir gently with a spoon or spatula until just combined. Avoid over-mixing to keep the pancakes light.
  • Preheat the Pan:
  • Heat a non-stick griddle or large skillet over medium heat. Lightly grease it with butter or oil.
  • Cook the Pancakes:
  • Pour ¼ cup of batter onto the heated griddle for each pancake. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 1-2 minutes, until golden brown on both sides.

Notes

  • Consistency: If the batter is too thick, you can add a little more milk, 1 tablespoon at a time, to reach your desired consistency.
  • Don’t Overmix: Lumps in the batter are okay; over-mixing can lead to dense pancakes.
  • Topping Ideas: These pancakes pair wonderfully with maple syrup, fresh berries, banana slices, or a sprinkle of powdered sugar.
  • Make Ahead: You can prepare the dry ingredients in advance and store them in an airtight container. Just add the wet ingredients when you’re ready to make the pancakes.
