Equipment
- Mixing bowls (2)
- Whisk
- Spoon or spatula
- Non-stick griddle or skillet
- Ladle or measuring cup (for pouring batter)
- Spatula (for flipping)
Ingredients
- 1 ½ cups all-purpose flour
- 3 ½ tsp baking powder
- 1 tbsp granulated sugar
- ¼ tsp salt
- 1 ¼ cups milk
- 1 large egg
- 3 tbsp unsalted butter melted
- 1 tsp vanilla extract
Instructions
- Prepare Dry Ingredients:

- In a large bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.
- Mix Wet Ingredients:
- In a separate bowl, beat the egg, then add the milk, melted butter, and vanilla extract. Whisk until smooth.
- Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients and stir gently with a spoon or spatula until just combined. Avoid over-mixing to keep the pancakes light.
- Preheat the Pan:
- Heat a non-stick griddle or large skillet over medium heat. Lightly grease it with butter or oil.
- Cook the Pancakes:
- Pour ¼ cup of batter onto the heated griddle for each pancake. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 1-2 minutes, until golden brown on both sides.Serve warm with your favorite toppings like maple syrup, fresh fruit, or whipped cream.
Notes
- Consistency: If the batter is too thick, you can add a little more milk, 1 tablespoon at a time, to reach your desired consistency.
- Don’t Overmix: Lumps in the batter are okay; over-mixing can lead to dense pancakes.
- Topping Ideas: These pancakes pair wonderfully with maple syrup, fresh berries, banana slices, or a sprinkle of powdered sugar.
- Make Ahead: You can prepare the dry ingredients in advance and store them in an airtight container. Just add the wet ingredients when you’re ready to make the pancakes.
